Strawberry, Feta and Mint Skewers

Although I love to cook and I THINK I am quite creative in the kitchen.. I always have the hardest time planning appetizers when we are having a party. I mean.. there are so many barriers for a good appetizer: It needs to be bite sized, it needs to remain a good temperature for hours, it can’t be messy.. the list goes on. So when I find an appetizer that meets all of these needs I get excited! I had a birthday party a few weeks ago and came up with this little gem.

Ingredients: 

– Organic Strawberries                                        – Bunch of fresh Mint

– Balsamic Glaze                                                   – Feta Cheese

Method: 

Cube the strawberries and Feta into equal sized chunks.. I like to stay around the 1/2 inch mark.

Using a toothpick, assemble the ingredients starting with the strawberry, a piece of mint and a chunk of feta. Repeat until you have the desired number (warning: ALWAYS make more than you think you need.. these go fast!)

Drizzle the serving plate with balsamic glaze and plate the skewers feta side down so they stand up.

Serve and Enjoy!
