Turkey Bacon Wrapped Scallops

I am a big fan of foods that you can make for an appy or a meal. Make them on skewers and they are great for a party. Make them with a side salad or some delicious sides and they make a meal fit for any family or foodie. (Turkey) Bacon wrapped scallops are extremely easy to make…. in fact they are pretty tough to mess up… but they make a huge impact and you will impress any guest!

Ingredients: 

-10 large scallops                                                -5 slices of turkey bacon

-2 limes                                                                  -bunch of fresh cilantro

-4 tbs mayonnaise                                               -2 tbs sweet chilli lime sauce

-fresh ground salt and pepper

Method: 

Set the broiler on your oven to high.

Slice your turkey bacon slices in half lengthwise and set aside.

Wrap each large scallop with a half a slice of turkey bacon and insert skewer. Season with salt, pepper and squeeze the juice of one whole lime.

Place bacon wrapped scallops on a baking sheet and place in the oven. Broil on high on each side for 5-6 minutes or until starting to golden. Flip half way through.

Sauce: 

Mix mayo, sweet chilli lime sauce, cilantro and the juice from one lime.

Set aside to dip.

Plate the scallops with the sauce on the side. Garnish with fresh cilantro and some freshly squeezed lime and enjoy!
