Beet Chips with Sea Salt and Herbs de Provence

Best. Chips. Ever.

I dont think I have ever met a person who does not love a potato chip. They are crispy, salty and oh so addictive.. but lets be real, chips are NOT healthy! Luckily, there are ways around it like the Kale Chip, the Sweet Potato chip, and here, the Beet Chip. While still keeping with the crisp of the potato chip, Beets are much better than you as they are low in fat, cholesterol and calories and high in fibre, vitamins, and anti-oxidants.



-4 large Beets                                   -2 tbs Olive Oil

-Sea Salt                                            -Herbs de Provence


Preheat the oven to 300 degrees F.

Start by peeling the beets until all the skin is gone. Then, with a mandoline, slice the beets thinly. (if you do not have a mandoline, use a knife.. just make sure you slice thinly so they crisp.)

Toss in a light coating of olive oil, sea salt and herbs de provence. (Hint: don’t salt too much as the flavour will concentrate as you bake them. If you want them saltier, add more salt after the chips have cooled.) Lay flat on a rimmed baking sheet and bake in the oven for 20-30 minutes or until crispy.

Remove the beets from the oven and lay flat on a cooling rack… this will crisp them up even more.
