Fish Tacos… ahhh music to my ears! I love them from a restaurant, I love them from a taco truck, and I love them from the comfort of my own kitchen. There are so many wonderful ways to enjoy them, this is one of the simplest recipes and its just delicious!
Ingredients: (serves 4)
– Corn tortillas (3-4 per person) – 2 ripe avocados
-4 white fish fillets (tilapia, halibut or cod work well) – 2 tomatoes
– 1 ripe mango – 1 jalapeno pepper
– 1/2 red onion -2-3 limes
– Chipotle Mayonaise (Optional) -Bunch of Cilantro
– 3 ounces Tequila (Optional)
Preheat the oven to 350.
Start off my marinating the fish in freshly squeezed lime juice, a bunch of chopped cilantro and small palmful of fresh ground pepper and sea salt. I like to add some tequila while marinating as well, I find it adds a little more flavour.
Place fish on a non stick baking sheet or dish and bake in the oven for 15-20 minutes or until fish flakes with a fork.
While fish is baking, assemble the avocado and mango salsa. To make the salsa, combine diced tomatoes, diced avocado, mango and minced jalapeno pepper. Squeeze salsa with the juice of one lime and add a palmful of fresh chopped cilantro.
Once the fish is done cooking, remove from the oven and flake it with a fork to fluff it up. I like to warm up my corn tortillas in the microwave or oven in between 2 plates to keep them moist. ( If you are doing them in the oven you only need a about 15 seconds to warm up.)
Once warm, Assemble the tacos with fish, avocado mango salsa and a drizzle of chipotle mayonnaise. Squeeze with fresh lime juice and enjoy!!
