Bacon and egg cups… say WHHHAATTTTT!!!????
SO yummy and SO easy! This is a great thing to make for a brunch or anytime you are making breaky for lots of people (or just one special guy named Ryan.) You can make 12 of these at the same time and they will all cook evenly:) I like to pair these delicious morsels with a simple salad or thickly sliced tomatoes. I chose turkey bacon, but any kind will do.
–Bacon (2 slices per cup) -Eggs (1 per cup)
-Pesto (1/2 Tsp per cup) – Grape Tomatoes (1-2 per cup) sliced in half
– Salt and pepper to taste – grated cheese (optional)
preheat oven to 400 degrees.
start by half cooking the bacon (i suggest the oven method) and then wrap half-cooked bacon slices around the insides of a muffin tin. Take a half-slice and make sure the bottom of the tin is covered as well. Place a 1/2 tsp of pesto on top of the bottom slice of bacon and then crack an egg into the the bacon “cup.” Place sliced grape tomato on top and then pop into the oven and bake for 12-14 minutes. Remove tin from the oven and slide the bacon cups out of the tin. They should slide out easily.. you might need to spin them around in the tin a bit to help get them moving.
Plate 2 on each plate with a side salad, garnish with salt and pepper and enjoy!!
