The Loaded Breakfast Potato

The breakfast potato is something I have been dreaming about making for about a year now..The idea of having a twice baked potato, but breakfast style just blew my mind and I new I had to create it. I love creating fun and different breakfast dishes and with this one you can choose any toppings or fillings that you want, the possibilities are endless!


– 2 Russet baking potatoes                                 -5 eggs

–  2 TBS Mayonaise                                              -6 cooked slices of turkey bacon

– 1 cup of Cheddar Cheese                                  -Sea Salt and Pepper

– 1/4 cup Guacamole                                           -1/4 cup fresh salsa

-1/4 cup Balken Yogurt


Preheat the Oven to 400 degrees. Bake potatoes for 50 min-an hour. Remove from oven and slice across the top of the potato to remove the insides while keeping the potato skin in tact. Mix potato with mayonnaise and salt and pepper. Re-stuff the potatoes a 1/3rd full with mashed potato, and then top with 3 slices of crisp bacon. In a hot frying pan, scramble 5 eggs with some cheddar cheese and sea salt and pepper. Stuff the remainder of the potato with scrambled eggs and top with a delicious hand full of cheddar cheese. Put the potatoes back in the oven and broil until cheese turns golden. Remove from the oven and top with salsa, fresh guacamole and yogurt. Serve and enjoy!
