Gluten Free Peanut Butter Banana Cookies

I have said it before and I will say it again, baked goods are going to be the death of me….cookies, brownies, cakes, muffins.. you name it, I love it. This is why I need to create healthy alternatives to these tasty little morsels I love so much, otherwise I may have to apply for The Biggest Loser!


– 1 Cup of Almond Meal                         -3 Ripe Bananas (mashed)

– 1 1/3 Cups of Rolled Oats                    – 1 Cup of Creamy Peanut (or Almond) Butter

– 2 Eggs                                                       -1 TSP Cinnamon

-1 TBS Real maple Syrup                         -1/2 TSP salt

-1/2 Cup Butter (or Coconut Oil)            -1 Cup of Chocolate Chips (or Carob Chips)

-1/3 cup Unsweetened Coconut

(optional: Raisins, Craisins, or any other nut or seed you would like)


Preheat the oven to 350 degrees. In a large bowl, combine all dry ingredients. In a separate bowl, combine all wet ingredients. Add wet and dry ingredients together and mix well. Add chocolate chips ( I recommend 1 cup, you can put more or less depending on your taste!) Bake cookies on a parchment paper covered baking sheet for 18 minutes and let cool on cooling racks. These cookies are delicious and you can enjoy them at any hour of the day!  I like them best at breakfast:)
