Gluten Free Banana Bread

When things taste THIS good, its hard to believe they are good for you! This is the recipe that started it all for me, the idea that anything can taste amazing and still be delightfully healthy! I have always loved banana bread…so i decided to create a healthy version for the typically unhealthy treat… Its all about substitutions. Not everything has to be covered in butter or oil or sugar… as the saying goes, fake it till you make it! This Banana Bread is a true favourite with all of my friends and Crossfitters alike.

  Ingredients: (makes 2 loafs) 

-6 Bananas(mashed well)                    – 4 Eggs

-2 cups Quinoa flour                             – 1 cup sugar

– 2 tsp baking soda                               -1/2 cup Oats

-1/3 cup flax meal                                 -1 cup unsweetened applesauce

-1 tbs real maple syrup                        – 1 tsp cinnamon

Optional (yet HIGHLY recommended): Chocolate chips  and Walnuts

Method: 

Preheat oven to 350 degrees F. Mix together Quinoa flour, baking soda, oats, flax meal and cinnamon. In a separate bowl, mix together mashed bananas, sugar, maple syrup, eggs and applesauce. Combine dry and wet ingredients and mix well. Add desired amounts of chocolate chips and walnuts. Pour into 2 loaf pans and pop into the oven. Bake for 50 minutes. Remove from oven and let cool on drying rack before slicing. ENJOY!
