….Thats right, I said it! Music to your ears right?? This recipe is quick and easy and Oh so delicious. ENJOY!
-2-3 large Yams – Pinch of Parsley
– 1/2 TBS Olive Oil – 3 TBS Mayonaise
– 1 TBS Truffle Oil – 1/4 Cup Parmesan Cheese
Preheat your oven to 450 degrees F.
Scrub yams and then slice into desired french fry length. Toss yams in 1/2 TBS Truffle Oil and 1/2 TBS Olive Oil. Spread yams evenly in a single layer on a baking sheet. ( I like to cover the baking sheet with parchment paper to avoid any of the yams from sticking.) Cook for 8-10 minutes each side or until golden. Remove from oven and immediately place on a serving plate. Sprinkle parmesan cheese over fries and garnish with fresh parsley.
For the dip, mix 3 TBS of mayo with 1/2 TBS truffle oil and serve alongside the yam fries.
